Almost all of the carbs come from the zucchini. Yes, even the “keto-friendly” vegetables like zucchini have carbs.

Think you’re going to miss good Italian flavors while eating Keto?  Fear not!  Enjoy the same flavors, but without the carbs.  These noodles are the perfect style of comfort food that you are looking for, while still maintaining your Ketogenic diet. This dish can be made as your main course or, as a side to another entree. You can use only parsley or add more herbs of your choice. 

If you want to kick it up a notch, throw in some red pepper flakes like I do.

These are great as a light meal or snack, or great together with our Marinara Chicken or other dinner recipes.

Parmesan Garlic Keto-Friendly Zoodles

A quick, Keto-friendly “pasta” dish that is so tasty you won’t even miss the carbs!

Ingredients

  • 3 medium zucchini spiraled
  • 3 each garlic cloves minced
  • 4 Tbsp olive oil
  • 3 Tbsp parmesan cheese grated
  • 2 Tbsp fresh parsley chopped
  • 1 tsp salt
  • 1 tsp pepper salt and pepper to taste

Instructions

  1. Heat the olive oil in a saucepan, and then add the garlic, wait 30 seconds and then add the zucchini.

  2. Cook stirring until the zucchini is soft.

  3. Season with salt and pepper to taste.

  4. Stir in parsley and parmesan.

  5. Serve warm!
