This Thai inspired bowl is filled with amazing flavors, and its really easy to prepare — just requires a single pan!  It’s a spicy recipe, but you can adjust the level of curry to your liking. Prepare and eat right away, it’s much better when fresh, however, you can save leftovers in the fridge to enjoy later!

This goes great over some cauliflower rice!

Keto Low-Carb Thai Chicken Bowl

Ingredients

  • 1/2 lb chicken breasts cut into strips
  • 1 small onion sliced
  • 1 small green bell pepper sliced
  • 1/2 small yellow bell pepper sliced
  • 1 cup fresh spinach chopped
  • 1/2 cup heavy cream
  • 1 Tbsp fresh ginger chopped
  • 1 tsp curry
  • 1 Tbsp olive oil use as needed
  • 1 tsp salt to taste
  • 1 tsp pepper to tast

Instructions

  1. Heat some olive oil and sauté the chicken breast in a saucepan.

  2. Stir in onion and cook until soft.

  3. Then stir in peppers and ginger, cook until soft.

  4. Add spinach, heavy cream, curry, salt and pepper.

  5. Cook for about 5 minutes in low heat and serve warm!
