Ingredients

  • 1/2 lb chicken breasts cut into strips
  • 1 small onion sliced
  • 1 small green bell pepper sliced
  • 1/2 small yellow bell pepper sliced
  • 1 cup fresh spinach chopped
  • 1/2 cup heavy cream
  • 1 Tbsp fresh ginger chopped
  • 1 tsp curry
  • 1 Tbsp olive oil use as needed
  • 1 tsp salt to taste
  • 1 tsp pepper to tast

Instructions

  1. Heat some olive oil and sauté the chicken breast in a saucepan.

  2. Stir in onion and cook until soft.

  3. Then stir in peppers and ginger, cook until soft.

  4. Add spinach, heavy cream, curry, salt and pepper.

  5. Cook for about 5 minutes in low heat and serve warm!
