Ingredients

  • 12 large eggs beaten
  • 2 cups fresh spinach chopped
  • 5 oz mozzarella cheese grated
  • 2 oz parmesan cheese grated
  • 5 Tbsp olive oil
  • 2 each garlic cloves minced
  • 1 tsp salt
  • 1 tsp pepper to taste

Instructions

  1. Heat the olive oil in a frying pan and quickly saute the garlic.

  2. Mix all the remaining ingredients in a bowl.

  3. Add the garlic to the mixture.

  4. Pour into a greased round baking tray.

  5. Bake in 350 degree preheated oven for about 25 minutes or until set.
