Got leftovers from last night’s dinner? We’ve got you covered! This breakfast recipe delectably resurrects your favorite leftover dinner protein and brings it back for an encore. The creaminess of the scrambled eggs, the heartiness of the protein and fat, and the kick of heat from the chilis is a perfect way to get you going for the rest of the day. Serve with plain ripe avocados topped with salt and pepper.
Feel free to mix it up with different proteins — the key idea is just to keep it ketogenic — low carb and high fat.
Spicy Keto Breakfast Scramble
This breakfast scramble is a great way to change things up in the morning! I love using leftovers and finding a way to incorporate them into a Keto-friendly breakfast is an added bonus!
Ingredients
- 4 large free range eggs
- 1/2 lb leftover protein roughly chopped
- 2 Tbsp finely chopped shallots
- 1 Tbsp freshly crushed hot chili (Thai Bird's Eye or Serrano recommended)
- 1/2 tsp cumin powder
- 1 tsp freshly crushed/dried garlic
- 3 Tbsp pasture fed butter
- 1/2 cup mozzarella or any other yummy melty cheese
- 1 tsp salt
- 1 tsp pepper salt and pepper to taste
Instructions

Add butter to a skillet on medium heat and sauté the shallots, chilli, garlic and cumin until soft.

Add the leftover meat and fry further for 2 minutes until warmed through.

Fold in the eggs and scramble until everything has mixed thoroughly. Adjust seasoning according to your taste.

Throw in the cheese and mix into the scramble until soft and gooey.

Add a few slices of avocado on the side and enjoy!
