This breakfast scramble is a great way to change things up in the morning! I love using leftovers and finding a way to incorporate them into a Keto-friendly breakfast is an added bonus!
Add butter to a skillet on medium heat and sauté the shallots, chilli, garlic and cumin until soft.
Add the leftover meat and fry further for 2 minutes until warmed through.
Fold in the eggs and scramble until everything has mixed thoroughly. Adjust seasoning according to your taste.
Throw in the cheese and mix into the scramble until soft and gooey.
Add a few slices of avocado on the side and enjoy!
