Creamy Keto Spinach and Celery Soup

This spinach and celery soup is not only delicious, but also has tons of healthy benefits beyond just being Ketogenic! It’s great soup to make for lunch on a fall or winter day. Celery comes with detoxifying properties and spinach is loaded with iron, calcium, and many other nutrients.
This is great on its own, or serve it as a side with any other keto-friendly lunch or dinner items.
Creamy Keto Spinach and Celery Soup
The vibrant colors and tasty flavors make this a favorite on the Keto lunch menu. It’s easy to make and comes together quickly. Make a big batch and take leftovers to work for lunch the next day.
Ingredients
- 3 oz spinach
- 3 oz celery approx. one stalk
- 1/3 cup vegetable broth
- 3 Tbsp heavy cream
- 1 Tbsp coconut oil
- 1 Tbsp minced fresh parsley
- 1 tsp garlic powder
- 1 tsp salt
- 1 tsp pepper salt and pepper to taste
Instructions

Wash vegetables.

Chop celery.

In a large pan, heat coconut oil and add chopped celery.

Cook over high heat for about 5 minutes.

Add spinach leaves and cook for another couple of minutes.

Add heavy cream and stir.

Add vegetable broth and garlic powder.

Bring to a boil and cook for 10 minutes.

Mix with an immersion blender to obtain a smooth texture.

Season with black pepper and salt; stir thoroughly.

Sprinkle with fresh parsley.
