Creamy Keto Meatballs and Slaw

Warm and comforting meatballs are a universal favorite. This quick meatball recipe involves very few steps and is a great dish to make in advance as its flavor develops over time. The crisp, zingy slaw is a perfect compliment to cut through the richness of the creamy tomato sauce.
You might think most meatballs are already Keto-friendly… but they usually are not! Often times people add bread crumbs to them, which is a no-no on Keto. Our recipe is Keto approved!
Creamy Keto Meatballs and Slaw
I love this recipe for Sunday dinner. Keto-friendly comfort food is always at the top of my list! I make a big batch and set aside enough for lunch the next day. Delicious!
Ingredients
For Meatballs
- 1.5 lb ground pork
- 1.5 lb ground veal
- 1 Tbsp ground fennel seeds
- 2 Tbsp crushed fresh/dried garlic
- 1/2 tsp nutmeg powder
- 1 tsp salt
- 1 tsp pepper
For Sauce
- 1 cup chopped tomatoes
- 1/2 cup chopped onions
- 1 bay leaf
- 1 Tbsp crushed fresh/dried garlic
- 1 tsp freshly crushed /dried chili
- 2 Tbsp freshly chopped parsley
- 2 Tbsp butter/olive/coconut oil
- 1 cup heavy cream
- 1 tsp salt
- 1 tsp pepper
For Slaw
- 3 Tbsp Keto-friendly mayo (Hellman’s or Dukes)
- 1 cup shredded cabbage
- 1 cup finely sliced carrots
- zest of ½ an orange
- lime and zest of 1 lemon
- 1 tsp toasted fennel seeds
- 1 tsp salt
- 1 tsp pepper
Instructions

Mix thoroughly together all the ingredients for the slaw. Adjust seasoning according to taste and set aside for at least 10 minutes.

Combine all ingredients for the meatballs and form into golf ball sized rounds.

In a hot deep skillet/pot throw in some oil and evenly brown the meatballs on all sides. Take out and set aside.

In the same skillet/pot, melt the butter and sauté all ingredients for the sauce except for the cream and parsley until soft and translucent.

Once the mixture is slightly mushy, add the cream and cook further for another 3-4 minutes.

Add the reserved meatballs into the sauce and cook for 10 more minutes. Check for seasoning and finish with parsley.

Assemble and enjoy.
