I love this recipe for Sunday dinner. Keto-friendly comfort food is always at the top of my list! I make a big batch and set aside enough for lunch the next day. Delicious!
Mix thoroughly together all the ingredients for the slaw. Adjust seasoning according to taste and set aside for at least 10 minutes.
Combine all ingredients for the meatballs and form into golf ball sized rounds.
In a hot deep skillet/pot throw in some oil and evenly brown the meatballs on all sides. Take out and set aside.
In the same skillet/pot, melt the butter and sauté all ingredients for the sauce except for the cream and parsley until soft and translucent.
Once the mixture is slightly mushy, add the cream and cook further for another 3-4 minutes.
Add the reserved meatballs into the sauce and cook for 10 more minutes. Check for seasoning and finish with parsley.
Assemble and enjoy.
