This is a really delicious way to cook perfect fish. The fragrant Indian spices and the rich, moist texture of the fish, makes this recipe a must try for all seafood lovers. You can substitute the Cod with Halibut or any white fish; Wild Salmon and Ocean Trout will work great too.  The flavors are nice, and not too overpowering.

The amazing flavors and spices in this dish have made it a Sunday dinner favorite! I always set just enough aside so that I can grab it for lunch the next day.

Ingredients

  • 1 1/2 lbs skinless cod filets
  • 2 cups coconut cream
  • 1/2 cup chopped red onions
  • 1/2 cup chopped broccoli
  • 1 cup baby spinach
  • 1 Tbsp curry powder/madras curry powder
  • 2 Tbsp butter/ghee/coconut oil
  • 2 Tbsp fresh/dried crushed garlic
  • 2 Tbsp freshly chopped cilantro
  • 1 tsp salt
  • 1 tsp pepper

Instructions

  1. Preheat oven to 350 degrees.

  2. Rub a baking dish with butter and set aside.

  3. Combine all the ingredients except for the fish and pour half of it into the greased baking dish.

  4. Place the fish fillets on top of the mixture and pour over the remainder.

  5. Bake for 20 mins or until fish has cooked through. Enjoy with a generous squeeze of lime.
