Eating raw vegetables is a great way to get your daily dose of vitamins and minerals, which could otherwise be lost during the cooking phase. This cabbage salad is light and full of flavor! Complete your salad with a simple dressing that combines the sweetness of coconut oil with the pungent aroma of yellow mustard.
Add more Keto-friendly nuts or seeds to up the fats and make it more filling: sunflower seeds, pumpkin seeds, almonds, etc.
This goes great as a side with a low-carb dinner or lunch entree.
Keto Cabbage Salad
This salad is perfect for a quick lunch and a great option if you're only hungry for a light dinner. It can also be served on the side of your favorite Keto-friendly main course! Very versatile and so delicious!
Ingredients
- 4 oz cabbage
- 1 oz zucchini
- 3/4 oz Brazilian nuts
- 1 Tbsp coconut oil
- 1 Tbsp yellow mustard
- 1/4 tsp salt to taste
Instructions

Wash your vegetables.

Chop cabbage.

Cut zucchini into small strips.

Place chopped cabbage, zucchini strips and Brazilian nuts in a bowl.

Mix coconut oil, yellow mustard and a pinch of salt.

Season your salad.

Serve and enjoy!
