NOTE: Most of the carbs in this dish come from the tomatoes and the onion. If you’re trying to go even more low-carb, cut back on those and just go for more olive oil and garlic flavor.

Everyone loves pasta, but is it the sauce or the noodles we actually like?  If the sauce is good, who cares about the noodles?!  These zucchini noodles area a great substitute, and you won’t even miss the real thing… trust me.  

You can make your own zucchini noodles with a spiralizer, or you can now buy them pre-spiralized in noodle form at many supermarkets.  Whole Foods in the US has them in every location I’ve seen, which is where I get mine.  It makes things SO MUCH easier to buy them pre-noodled.  (Is that a word?)

Add fresh basil if you enjoy this herb and a generous drizzle of olive oil!

Keto Bolognese Zucchini Noodles

Zucchini noodles are a great substitute for the real thing. They add another layer of flavor to your pasta and are very filling! This is the perfect way to enjoy a delicious pasta Bolognese without all the added carbs.

Ingredients

  • 3 large zucchini spiraled
  • 1/2 pound ground beef
  • 1 small onion chopped
  • 1 each garlic clove minced
  • 2 each ripe tomatoes chopped
  • 2 Tbsp parmesan grated
  • 2 Tbsp olive oil
  • 1 tsp salt
  • 1 tsp pepper salt and pepper to taste

Instructions

  1. Heat olive oil in a saucepan. Then add the beef, onion and garlic, cook until browned.

  2. Stir in tomatoes and cook until they become a sauce, add some water if needed.

  3. Stir in the zucchini and cook until soft.

  4. Season with salt and pepper to taste.

  5. Top with grated parmesan.


  6. Serve warm and enjoy!
