Low-Carb Bacon & Cheddar Muffins

So many things to love about these muffins, besides being low-carb and Keto-friendly. Crispy bacon and cheddar cheese, wrapped into a delicious muffin make these a savory breakfast favorite. They are light, delicious, and a great breakfast item to make ahead and easily grab on your way out the door.
Keto Bacon & Cheddar Breakfast Muffins
These Keto-friendly muffins would be a great add to a Sunday brunch menu. A breakfast option the whole family will love!
- 1 1/2 cup almond flour
- 8 oz bacon
- 1/2 cup plain greek yogurt
- 2 each eggs
- 1 cup diced cheddar
- 4 Tbsp unsalted almond butter
- 3 Tbsp chopped fresh sage leaves (6 or 7 leaves)
- 2 tsp instant yeast
- 1 tsp salt
Cut your bacon slices into small cubes and quickly fry them in a pan or skillet.
In a large bowl, mix almond flour, chopped cheddar, chopped sage leaves, salt, sugar and instant yeast.
In another bowl, whisk eggs, almond butter and Greek yogurt;
Add fried bacon cubes.
Put the egg mixture in the first bowl together with the flour mixture and stir thoroughly.
Put 1 or 2 Tbsp mixture inside muffin wrappers (each wrapper shall be 2/3 full).
Bake at 350°C for 20 minutes.
