A frittata is a staple breakfast in most European and many American households. The cheesy and meaty mouth feel of this recipe makes it an ideal way to start your day. Serve alongside a fresh avocado salad or enjoy it with your favorite Keto-friendly sauce.
Funny story… my dad almost burned down his house making a frittata.. so don’t be like him and burn a towel while trying to take the pan out of the oven!
Keto Bacon and Cheddar Cheese Frittata
This is a favorite Keto breakfast of mine -- it's a tradition in our family to have a frittata at least once per weekend!
- 10 large eggs free range
- 1/2 cup shredded aged cheddar cheese
- 1 cup chopped bacon
- 2 Tbsp butter
- 3/4 cup heavy cream
- 1 Tbsp fresh crushed or dried garlic
- 1 tsp dried or fresh oregano
- 1 tsp dried or fresh Thyme
- 1/2 cup diced bell peppers
- 1/2 cup diced onion
- 1 tsp salt
- 1 tsp pepper
Preheat oven to 350 degrees.
Whisk the eggs with the heavy cream and cheddar cheese. Set mixture aside.
In a medium hot skillet, melt the butter. Sauté the onions, bell peppers and bacon in the butter until soft and coloured.
Add the remainder of the seasonings and cook 5 more minutes. Turn off the heat and let the mixture cool for at least 10 minutes.
Fold in the bacon mixture nicely with the eggs and pour contents into a greased baking dish.
Top with some more cheddar and cook for 25-30 minutes until cooked through.
