Keto Bacon and Cheddar Cheese Frittata

This is a favorite Keto breakfast of mine -- it's a tradition in our family to have a frittata at least once per weekend!

Ingredients

  • 10 large eggs free range
  • 1/2 cup shredded aged cheddar cheese
  • 1 cup chopped bacon
  • 2 Tbsp butter
  • 3/4 cup heavy cream
  • 1 Tbsp fresh crushed or dried garlic
  • 1 tsp dried or fresh oregano
  • 1 tsp dried or fresh Thyme
  • 1/2 cup diced bell peppers
  • 1/2 cup diced onion
  • 1 tsp salt
  • 1 tsp pepper

Instructions

  1. Preheat oven to 350 degrees.

  2. Whisk the eggs with the heavy cream and cheddar cheese. Set mixture aside.

  3. In a medium hot skillet, melt the butter. Sauté the onions, bell peppers and bacon in the butter until soft and coloured.

  4. Add the remainder of the seasonings and cook 5 more minutes. Turn off the heat and let the mixture cool for at least 10 minutes.

  5. Fold in the bacon mixture nicely with the eggs and pour contents into a greased baking dish. 

  6. Top with some more cheddar and cook for 25-30 minutes until cooked through.
