Easy Keto Pork and Cabbage Casserole

This recipe allows you to have a good conversation while the magic happens in the oven. You just need to cut everything, place in a casserole and the oven does the rest for you! It’s better to consume right away, but you can use leftovers to make a sandwich with keto bread, or microwave some cauliflower rice and throw this on top.
This version uses pork tenderloin, which is quite lean. If you’re looking to up your fats and make it more filling, then opt for a different type of pork like ground pork, or cut strips of pork belly. Or just add some bacon!
Easy Keto Pork and Cabbage Casserole
One dish casseroles are so convenient on busy weeknights. The flavors of the pork and cabbage together create a warm, comforting meal.
Ingredients
- 1 lb pork tenderloin cut into strips
- 1 small onion chopped
- 3 cups cabbage grated
- 1 tsp cayenne pepper
- 1 tsp fresh herbs
- 1 tsp olive oil
- 1 tsp salt
- 1 tsp pepper to taste
Instructions

Place all the ingredients in a casserole.

Season with salt, pepper and add herbs.

Drizzle with olive oil and mix well.

Cover the casserole with aluminum foil.

Place in preheated oven (325F) for about 30 minutes or until browned.
