NOTE: The carbs in this soup mainly come from the onion and the broccoli. If you’re trying to stay even lower carb, you can cut down on the onion.

This soup is delicious and creamy, with the unique flavor of the broccoli and parmesan combination.  You can have it for lunch, store some in the fridge, reheat and have more for dinner at evening.  Feel free to make experiments with herbs like thyme and fresh oregano, or add more “bulk” by mixing in some pre-cooked cauliflower rice!

Keto Parmesan Broccoli Soup

Another delicious soup to warm you up on a cold fall or winter day! Easy to prepare and delicious as leftovers.

Ingredients

  • 1 head broccoli chopped
  • 1 small onion diced
  • 1 Tbsp butter
  • 2 Tbsp parmesan cheese grated
  • 1/2 cup heavy cream
  • 1/2 cup warm water
  • 1 tsp salt
  • 1 tsp pepper salt and pepper to taste

Instructions

  1. Heat butter in a saucepan, add onion and cook until browned.

  2. Stir in broccoli and cook until soft (add some water).

  3. Combine cooked broccoli mixture and heavy cream in food processor. Mix until homogeneous.

  4. Return the soup to the saucepan, season with salt and pepper.

  5. Serve in bowls and sprinkle with parmesan.
