Baked Egg with Avocado and Bacon

This is a delicious and healthy recipe, that is also fast and easy to prepare. Avocado’s buttery texture, together with crispy bacon, sweet coconut oil, and hot chili powder, will provide you with all the flavor you need to kick off your day!
This one is very low-carb with relatively high fat, so it is excellent for a ketogenic breakfast.
Keto Baked Egg with Avocado and Bacon
The fact that this recipe is so quick makes it a great option for any morning of the week. The preparation is easy and I can pop it in the oven while I finish getting ready to head out the door. Lots of good healthy fats included making this a great low-carb keto meal to set the tone for the rest of the day.
- 1/2 each avocado
- 1 each egg
- 2 oz bacon
- 1 Tbsp coconut oil
- 1/2 tsp white pepper
- 1/2 tsp chili powder
- 1 tsp salt to taste
Cut bacon into small cubes.
Heat coconut oil in a pan and quickly fry bacon cubes (a couple of minutes is enough).
Cut your avocado in half and carefully remove the pit.
Crack an egg into the avocado half.
Sprinkle with fried bacon, salt, pepper and chili powder.
Bake at 200°C / 400°F for 15 minutes.
