Keto Caesar Salad

Enjoy this creamy, crunchy, cheesy, and healthy version of everyone's favorite - Caesar Salad.  The seeds are a great crunchy replacement for croutons, and you can add egg, chicken, or other protein to mix it up.  Very satisfying as an entree salad for lunch or dinner, and it requires no cooking!

Ingredients

  • 1 cup mixed greens
  • 1/2 cup kale
  • 1/2 cup spinach
  • 2 tbsp Primal Kitchen Caesar Dressing
  • 1/4 cup Italian cheese shredded
  • 1 ea eggs hard boiled
  • 1 tbsp pumpkin seeds
  • 1 tbsp pine nuts
  • 2 tbsp hemp seeds
  • 1 tbsp olive tapenade
  • salt to taste
  • pepper to taste
  • italian seasoning to taste

Instructions

  1. Combine the greens in a large mixing bowl.

  2. Add the dressing and toss the greens to coat with dressing.

  3. Add the cheese, Italian seasoning, olive tapenade, and salt and pepper.  Toss to integrate.

  4. Sprinkle the seeds on top.

  5. Add protein such as hard-boiled egg, chicken, salmon, etc. (optional)
