Not only is this soup tasty, but it’s also filling and warms you up from the inside out. A great choice for a healthy warm meal on a cold day.
Melt half of the butter in a saucepan and add the cauliflower when hot. Cook until soft (add some water if needed). Remove from saucepan and set aside.
Melt remaining butter in the same saucepan and sauté the bell pepper. Remove and set aside.
Add cooked cauliflower and heavy cream to food processor. Mix until creamy.
Add the cauliflower mixture to the saucepan with bell pepper and add some water (until desired thickness). Cook the soup for about five minutes.
Season with salt and pepper to taste.
Serve in bowls, garnish with parmesan and fresh herbs.
