Keto English Cottage Pie

Ingredients

  • 1 1/2 lbs ground beef fattier is better
  • 5 oz shredded cheddar cheese
  • 1/2 cup mozzarella cheese
  • 1 cup diced onions
  • 1 cup diced carrots
  • 1/2 cup diced tomatoes
  • 1/2 cup diced celery
  • 2 Tbsp garlic fresh
  • 1 Tbsp rosemary fresh
  • 1 Tbsp thyme fresh
  • 2 cups beef stock
  • 2 Tbsp butter / olive oil / coconut oil
  • 1 tsp arrowroot powder optional
  • 1 tsp salt to taste
  • 1 tsp pepper to taste

Instructions

  1. Preheat oven to 350 degrees.

  2. In a very hot deep skillet/pot brown the ground until it's dark and crispy. Take out of the skillet and reserve.

  3. In the same pot or skillet, melt butter until sizzling, then sauté the onions, carrots and celery along with the garlic and herbs until soft.

  4. Add in the tomatoes and stir for 3 minutes, then return the reserved beef back to the skillet. Mix well and cook for 5 minutes.

  5. Add the stock to the mixture and bring to a boil. Let the liquid reduce by half.

  6. Dissolve arrowroot powder into some cold water and add to the bubbling beef mixture. 

  7. As soon as the mixture thickens, adjust seasoning, turn of the heat and transfer to a deep baking dish or pie dish, leaving about an inch of space on the top.

  8. Pile on both the cheeses and bake for 10 minutes or until the top is melted gold.

  9. Enjoy!
