Keto-friendly comfort food! This cheesy, savory dish is delicious any time of the day.
Preheat oven to 400 degrees.
Line 2 baking sheets with aluminum foil.
Lay strips of bacon on one of the baking sheets with plenty of space between them.
Dice the cauliflower into bite-size pieces.
Place cauliflower onto the second baking sheet. Drizzle the cauliflower with coconut oil and season with salt and fresh cracked black pepper.
Bake the bacon and the cauliflower in the oven for 20 minutes. Check the bacon at the 12 - 15 minute mark for doneness, as the cooking time may vary based on the thickness of your bacon.
When the bacon is done remove it from the baking sheet quickly and place on paper towels to drain. Chop the bacon once it has cooled down.
In a saucepan, combine butter, heavy cream, and 1 cup of the cheese. Stir until the cheese is melted.
Remove from heat; add the cauliflower and most of the bacon, leaving some for garnish. Stir to combine.
Pour into individual serving dishes.
Top with the remaining ½ cup cheese and bake until browned; about 10 minutes.
Garnish with the leftover crunchy bacon bits.
